Ingredients:
- 3 cups organic rolled oats
- 1/2 cup chia seeds
- 1/2 cup psyllium husks
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup sesame seeds
- 1T linseeds (flaxseeds)
- 1t salt
- 1t baking powder
- 1T maple syrup
- 2 cups warm water
Another version is:
- 2 1/2 cups rolled oats
- 1 cup pumpkin seeds
- 3/4 cup almonds (we've even used half almonds and half almond meal)
- 1/2 cup sunflower seeds
- 1/3 cup ground flax seeds
- 1/3 cup psyllium husk
- 3T chia seeds
- 1 1/2 t salt
- 1T maple syrup
- 2 1/2 cup water
Method:
-
Preheat your oven to 180°C (fan-forced).
-
In a large mixing bowl, add all your dry ingredients and give them a good stir until everything’s well combined.
-
In a small bowl or jug, mix together the maple syrup and warm water.
-
Pour the wet mixture into the dry ingredients and stir until it all comes together into a thick batter.
-
Line a loaf tin with baking paper, then spoon in the batter. Use a spatula to smooth it out evenly.
-
Pop the tin into the oven and bake for 30 minutes.
-
After 30 minutes, take the loaf out of the tin, flip it upside down, and place it directly on the oven rack or a tray. Bake for another 30–40 minutes, until the crust is nice and firm.
-
Let it cool completely before slicing—if you can wait that long!
